Ingredients:
   2 Tbsp. Olive Oil
   3/4 cup yellow onions, small dice
   1/4 cup minced garlic
   1/3 cup Panko breadcrumbs
   1/2 cup Whole Milk
   2 lb. ground beef, 80/20 blend preferred
   1 whole egg
   1/4 lb. basil, chopped
   1/2 lb. Ricotta cheese
   3/4 cup Parmesan Cheese, grated
   Salt and Pepper to taste

Place all above ingredients in a medium sized bowl and mix thoroughly by hand until they are completely combined and the mixture is uniformly firm.

Coat your hands in olive oil, and using your hands form mixture into 8 balls

Florence native Chef Fabio Viviani first shared his Italian cuisine and vibrant personality with America when he was on Season 5 of "Top Chef."
